The
Vitalita Culinary Group (VCG) has produced two
free, original, on-line, vegan cookbooks (vegetarian/non-dairy e-cookbooks).
Over 90% of these recipes are
gluten free (no wheat, spelt, kamut, oats, barley, rye, etc.), and therefore suitable
for a person who has celiac disease or a person on a non-gluten diet.
Many of the recipes are low-fat, and all recipes are nutrient dense.
At this point, these two cookbooks contain over
150 original vegan recipes. Both of these
cookbooks include
pictures
of the recipes. (The full

This cookbook entitled "A Taste of Vitality" contains exclusively vegan-whole food-nutritionally dense recipes. Many of the recipes are low-fat (contain less than 15% of their calories from fat), or are easily integrated into a low-fat diet. Also, almost all of the recipes are gluten-free. Recipes in this cookbook range from appetizers (Quinoa Croquettes), soups (Black Bean and Vegetable Stew), vegetables (Roasted Mexican-Style Vegetables) to desserts (Mango Cream Pie). Desserts of Vitality This "Desserts of Vitality" cookbook contains exclusively vegan-whole food-nutritionally dense recipes. Many of the recipes are low-fat (contain less than 15% of their calories from fat), or are easily integrated into a low-fat diet. Also, almost all of the recipes are gluten-free. Recipes range from cakes ( Lemon-Poppy Seed Pound Cake), pies ( Hazelnut Pie), and cookies ( Coconut Macaroons) to frozen desserts ( Pineapple-Brazil Nut Ice Cream) and custards ( Orange Custard in Filo Cup). Printed Copies from Commercial Printing Services - If you
want to use a printing/copying service to have these cookbooks
printed, you might try one of the following: There may also be other websites that will print files you send to them for a fee. The electronic version does have color pictures - if you print them to a printer that does color, they do come out in color, but I have printed them to laser printers (non-color) and they look fine as well. (printing services charge much more to print in color than just in black and white, so in this case most people just print in black and white, and the pictures do look OK).
