Free Vegan (Vegetarian) Cookbooks/Recipes of the VCG

If you had trouble downloading the cookbooks from the main Free Cookbooks page , or you would like to get the cookbooks in a different file format (e.g., text format which would download faster because it is a much smaller file), this page contains additional information to help you download the cookbook file(s) in the format you want.
       

The Vitalita Culinary Group (VCG) has produced two free, original, on-line, vegan cookbooks (vegetarian/non-dairy e-cookbooks). Over 90% of these recipes are gluten free (no wheat, spelt, kamut, oats, barley, rye, etc.), and therefore suitable for a person who has celiac disease or a person on a non-gluten diet. Many of the recipes are low-fat, and all recipes are nutrient dense. At this point, these two cookbooks contain over 150 original vegan recipes. Both of these cookbooks include pictures of the recipes. (The full table of contents from these two cookbooks can be viewed before downloading the entire cookbooks.) Information About Viewing Cookbooks
To view the following publications on your computer:
 
1. For the PDF format, download and install Adobe Acrobat Reader software if you do not have it already (most computers already have it).
2. Right click (or click and hold for Macintosh) on the link you want (based on the format you want) below. PDF is one of the best formats because the pages are already formatted and it includes color pictures.
3. In the box which pops up select "Save as . . ." or "Save link as . . ." or "Download Link To Disk".
4. Select where you would like the file to be saved on your computer and click "OK".
5. Once the download has completed, double click the file, and it should be opened in the correct program (e.g., for the PDF format, the file will be opened in Adobe Acrobat Reader).

This cookbook entitled "A Taste of Vitality" contains exclusively vegan-whole food-nutritionally dense recipes. Many of the recipes are low-fat (contain less than 15% of their calories from fat), or are easily integrated into a low-fat diet. Also, almost all of the recipes are gluten-free.

       Recipes in this cookbook range from appetizers (Quinoa Croquettes), soups (Black Bean and Vegetable Stew), vegetables (Roasted Mexican-Style Vegetables) to desserts (Mango Cream Pie).

Desserts of Vitality

This "Desserts of Vitality" cookbook contains exclusively vegan-whole food-nutritionally dense recipes. Many of the recipes are low-fat (contain less than 15% of their calories from fat), or are easily integrated into a low-fat diet. Also, almost all of the recipes are gluten-free.

       Recipes range from cakes ( Lemon-Poppy Seed Pound Cake), pies ( Hazelnut Pie), and cookies ( Coconut Macaroons) to frozen desserts ( Pineapple-Brazil Nut Ice Cream) and custards ( Orange Custard in Filo Cup).

Purchasing Printed Copies of the Cookbooks

One way to use the above cookbooks is to download them and simply use them from your computer. Another is to download them and print them out using your own printer. Another would be to ask a company to print the cookbooks for you (see below for more information).

Obtaining Printed Copies from Commercial Printing Services - If you want to use a printing/copying service to have these cookbooks printed, you might try one of the following:

1) use the Kinko printing service (the printed document can be sent to your home, or you can pick it up at a local printing shop):

2) use other online printing services - these places may or may not have services to print just one document:

3) you can go to a copy place (such as Kinkos), and have it printed - most copy shops have computers connected to the internet so you can download the cookbook(s) while at the copy store, and then you can print from the computer - or you take a zip disk or other disk to the copy shop with the cookbooks on it, and then you will not need to download the cookbooks while at the copy shop.
There may also be other websites that will print files you send to them for a fee. The electronic version does have color pictures - if you print them to a printer that does color, they do come out in color, but I have printed them to laser printers (non-color) and they look fine as well. (printing services charge much more to print in color than just in black and white, so in this case most people just print in black and white, and the pictures do look OK).

File Format Information

On the pages at this site, you will find many different types of files with different types for formats. This is a quick description about each of the file formats.

  • txt - text format - ASCII format with 80 columns - this format can be easily read on the screen and e-mailed - no special viewers or programs required.
  • html - Hyper Text Markup Language format - ASCII format - this format can be easily read on web browsers (e.g., Netscape).
  • pdf - Portable Document Format - This format is best opened in Adobe Acrobat. There are 2 versions of Acrobat: (1) the FREE Adobe Acrobat Reader (version 3.0 or later is recommended) (this is the easiest and fastest way to view fully formatted documents on this web site) or (2) the commercial (not free) full version of Adobe Acrobat. Both are available for many computer platforms from Mac OS to MS-Windows/NT to UNIX). At this web site in general, it is recommended that the user choose to view/download PDF versions of documents/files. This will provide better viewing and printing than text versions. This is particularly true if the document/file is complicated in format and/or includes graphics or pictures. The reason for this recommendation is that a PDF file displays the document in question with all formatting as the author intended (including pictures), relatively small in size, can be easily searched, and can be viewed within a web browser (with the plug-in that comes with the FREE Adobe Acrobat Reader mentioned above). Additionally, the document can be viewed in it's intended format on almost any computer platform. Follow the instructions with the FREE Adobe Acrobat Reader download for information about making it possible for your computer to view files of this format (see link above). Printing of a pdf file with the above applications can also be done to many different types of printers. Depending on your computer platform and printer driver software, you may also be able to print a pdf file in "2up" format (where 2 pages from the document come out printed side by side on one page) or other formats which could reduce the number of sheets needed to print the document.
  • rtf - rich text format - for viewing, a file in this format must be opened in a word processor/text editing program (such as Microsoft Word) which can interpret this format.
  • doc - Microsoft Word format - for viewing, a file in this format must be opened in Microsoft Word (or another word processor that can open MS Word files).
  • mx2 - MasterCook format - this format must be opened in MasterCook - the mx2 files on this web site were created with MasterCook for the PC, so it may not be possible to open them in the old MasterCook for the Mac - if you are unable to open them in MasterCook , use the mxp version (see discussion below).
  • mxp - MasterCook interchange text format - this format is text, but without line breaks so it can easily be read back into MasterCook - if you want to load the cookbook into MasterCook, and you have trouble with the mx2 version, use this mxp version - if you just want a text version of the cookbook, the txt version maybe better because in that version the lines do not have more than 80 characters per line.
